Nestled in the mountains of Niigata Prefecture, the town of Echigo Yuzawa was christened “snow country” in the novel of the same name by Nobel laureate Yasunari Kawabata. Masses of snow from winter melt slowly into the earth and absorb into groundwater some forty to fifty years later. During the long journey, the water is cleansed of impurities and charged with abundant natural minerals from the soil. The soft water that flows back up to the surface is a blessing of nature. It has a subtly sweet flavor that has been cherished for generations. This pristine water is pumped up and used as is, without heating or treatment, for producing sake at Shirataki Sake Brewery. Since our founding, we at Shirataki uphold the creed that quality sake is born of quality water.
